Basic Vegan Chocolate Cupcake

I’m not vegan but a couple of my friends at the Fo Guang Shan Buddhist temple are. I’m trying a couple of vegan cupcake recipes for them and this is one I like. Tried this recipe by using a giant cupcake mold instead, under baked a little and it turned out like molten lava cake which my brother absolutely loved.

Ingredients:
1 cup soy milk
1 teaspoon apple cider vinegar
3/4 cup granulated sugar ( I used brown sugar)
1/3 cup canola oil (I used virgin coconut oil)
1 teaspoon vanilla extract
1/2 teaspoon almond extract, chocolate extract, or more vanilla extract
1 cup all-purpose flour
1/3 cup cocoa powder, Dutch-processed or regular
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Procedures:
1. Pre-heat oven to 350ºF and line muffin pan with paper or foil liners.
2. Whisk together soy milk and vinegar in a large bowl until it curdles.
3. Add sugar, oil, vanilla extract and other extracts to the soy milk mixture and beat until foamy.
4. In a separate bowl, sift together flour, cocoa powder, baking soda, baking powder and salt.
5. Combine dry ingredients into wet ingredients in two batches until no large lumps remains (a few lumps are ok)
6. Pour into lined muffin pans, filling 3/4 of the way.
7. Bake 18 to 20 minutes, until a toothpick inserted into the center comes out clean.
8. Transfer onto a cooling rack and let cool completely before frosting.

Variations:
– Cookies N’ Cream Cupcakes: Mix into cupcake batter 1 cup coarsely chopped vegan chocolate-cream-filled sandwich cookies (like Newman-O’s) and bake as directed.
