Calvin's Birthday Sugar Cookies

For an impromptu birthday request, from my nephew Calvin, I made Cut-Out Christmas Ornaments Rolled Sugar Cookies. The recipe I found online submitted by Jill Saunders. These are so easy to make and taste so buttery good, just like our local lengua de gato. Decorate with an easy to make Sugar Cookie Icing and you have an impromptu birthday party favor.

 

THE BEST ROLLED SUGAR COOKIES

Ingredients:

1-1/2 cups butter, softened

2 cups white sugar

4 eggs

1 teaspoons vanilla extract

5 cups all purpose flour

2 teaspoons baking powder

1 teaspoon salt

Directions:

In a large bowl, cream together butter and sugar until smooth.

Beat in eggs and vanilla.

Stir in flour, baking powder and salt.

Cover and chill dough for at least one hour, preferably overnight.

SUGAR COOKIE ICING

Ingredients:

1 cup confectioners’ sugar

2-3 teaspoons milk

2-3 teaspoons light corn syrup

1/4 teaspoons almond extract

assorted food coloring

Directions:

In a small bowl, stir together confectioners’ sugar and milk until smooth

Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, just add more corn syrup.

Divide into separate bowls and add food colorings to each bowl. Play around with mixing colors or pull out your old color wheel and unleash your inner Picasso.
